Molasses Cookies

Molasses cookies stacked and on a cooling rack.

Old style molasses cookies are my favourite, but sometimes it fun to take something you love, and give it a twist. The cookies turn out perfect, except I thought there be a stronger molasses flavour, so next time I experiment with these I might do some more molasses. Otherwise delish. Inspired by Glen & Friends Cooking and Jennifer Meyering recipes.

  • 1 cup margarine or butter
  • 1/2 cup sour cream
  • 2 cups brown sugar
  • 2 egg yolks
  • 1 tablespoon molasses
  • 2/3 cup non-alcoholic beer
  • 3 cups flour
  • 1/2 tablespoon corn starch
  • 1/2 tablespoon baking soda
  • 1/2 tablespoon baking powder
  • 1 cup oats
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1/2 cup raisins

  1. Cream together the butter, sour cream, and sugar until smooth.
  2. Once smooth beat in each egg yolk one at a time.
  3. In separate dish mix molasses and beer.
  4. In separate dish mix flour, corn starch, baking soda, baking powder, oat, cinnamon, and ginger.
  5. Add the wet and dry ingredients to first mixture in stages, when almost incorporated add raisins.
  6. Let sit in the fridge covered for a least 30 mins before scooping.
  7. Preheat the over to approx. 375F and line a baking sheet.
  8. Using desire size scoop (mine is little bigger than 1 tablespoon), scoop onto sheet and flatten with back of spoon.
  9. Cook for about 15-20 minutes or till lightly golden on top.
