Molasses Cookies

Old style molasses cookies are my favourite, but sometimes it fun to take something you love, and give it a twist. The cookies turn out perfect, except I thought there be a stronger molasses flavour, so next time I experiment with these I might do some more molasses. Otherwise delish. Inspired by Glen & Friends Cooking and Jennifer Meyering recipes.
Ingredients
- 1 cup margarine or butter
- 1/2 cup sour cream
- 2 cups brown sugar
- 2 egg yolks
- 1 tablespoon molasses
- 2/3 cup non-alcoholic beer
- 3 cups flour
- 1/2 tablespoon corn starch
- 1/2 tablespoon baking soda
- 1/2 tablespoon baking powder
- 1 cup oats
- 1 teaspoon cinnamon
- 1 teaspoon ginger
- 1/2 cup raisins
Instructions
- Cream together the butter, sour cream, and sugar until smooth.
- Once smooth beat in each egg yolk one at a time.
- In separate dish mix molasses and beer.
- In separate dish mix flour, corn starch, baking soda, baking powder, oat, cinnamon, and ginger.
- Add the wet and dry ingredients to first mixture in stages, when almost incorporated add raisins.
- Let sit in the fridge covered for a least 30 mins before scooping.
- Preheat the over to approx. 375F and line a baking sheet.
- Using desire size scoop (mine is little bigger than 1 tablespoon), scoop onto sheet and flatten with back of spoon.
- Cook for about 15-20 minutes or till lightly golden on top.
